WITH southern bluefin tuna, it seems it's all about muscle. This fish is an anatomical extreme of muscular exertion. Powered by a large heart and warm blood, it's a rare combination: a burst-of-speed predator and a long-distance cruiser. The same flesh sends sashimi chefs into culinary raptures. There's the dark muscle the fish uses to swim from Tasmania to the Timor Sea; the big red blocks pressed to work in a 70kmh feeding frenzy; and the ultimate: the pink, melt-in-the-mouth belly meat....
